La creazione di Giocondo, il nostro Cabernet Sauvignon esclusivo, un’arte che celebra tradizione e innovazione.
Tutto inizia con la raccolta manuale dei grappoli di Cabernet Sauvignon verso fine settembre, quando raggiungono la massima maturazione sotto il tipico sole di Imola.
Questo attento processo garantisce la selezione dei frutti più espressivi, promettendo intensità e complessità.
In cantina, le uve vengono sottoposte a una macerazione prolungata di 30 giorni, consentendo l’estrazione meticolosa di colori, aromi e sapori essenziali.
Segue un periodo di maturazione in botti di cemento, dove il vino non solo guadagna in struttura ma anche in carattere, catturando la quintessenza del Cabernet Sauvignon.
Questo metodo artigianale, combinato con l’uso di tecniche moderne, garantisce che ogni bottiglia di Giocondo rifletta la forza e la vivacità del vitigno.
Il terroir di Imola è il cuore pulsante di ogni bottiglia di Giocondo, il nostro pregiato Cabernet Sauvignon.
Il vigneto, piantato 25 anni fa, si trova in una posizione privilegiata a 150 metri sul livello del mare, beneficiando di un’esposizione a sud-est che garantisce tanto sole e un microclima ideale. Il terreno, un mix di limo e argilla, offre una mineralità e una ricchezza complesse che vengono trasferite direttamente alle viti.
Questo ambiente unico porta le uve a sviluppare un profilo aromatico distintivo, con note fruttate e una struttura taica equilibrata.
Il nostro impegno per la sostenibilità e la biodiversità si riflette in ogni aspetto della viticoltura, assicurando che il terreno sia nutrito e curato per le generazioni future.
Giocondo è, infatti, un omaggio al suo terroir, raccontando una storia di armonia tra uomo e natura in ogni sorso.
